This perforated riser is specifically designed for a holding application as it is constructed out of 304 Stainless Steel. Perforations designed to let water vapor into product to prevent from drying out. Can be used for fried products as well to prevent moisture from building underneath the product on the bottom of the pan. Can be used with or without water. (Use this riser with Part No. 91634)
