Whenever the seasons change, we found ourselves longing for freshness. Rather than staying in our traditional cooking ruts, we're on the lookout for new recipes. This is especially true in the spring when the newness of the season often impacts our moods and tastes.

This spring, shake things up with some of these excellent spring selections.

Spring Entree Selections to Cook and Hold

Our first offering is Grilled Halibut with Cilantro Butter. Not only is the recipe simple and delicious, but it also perfectly matches the season.

[The fish] is simply seasoned with lime juice, then served with a cilantro lime garlic sauce. Serve over a bed of greens with a nice loaf of bread for a complete meal.

If you're in the mood for something a bit more filling, consider Fried Rice with Spring Vegetables and Fried Eggs. Certainly, one of its best attributes (other than being totally delicious) is its adaptability. Although the recipe calls for certain vegetables, you can easily substitute in whatever ones are local and accessible to you.

For pasta lovers, try Fettuccine with Shiitakes and Asparagus. Oozing with rich ingredients, it's a great “comfort food” option. (Take care, however: the recipe calls for raw eggs, making it an option not best suited for everyone.)

Our vegetarian friends may be interested in some Turkish Stuffed Eggplant. Perfect when complemented with feta cheese crumbles, this dish is both filling and flavorful!
