March Madness Balsamic Chuck Roast

Pot roasts are great for game day because you can prepare everything in the morning, set a timer, and enjoy the fruits of your labor without many dishes. Depending on the crowd, pot roast leftovers are also awesome.  

Our favorite pot roast meat is chuck roast because it just falls apart and is great for making sandwiches the next day. We also enjoy recipes with a little creative tang and spice, so below is our March Madness Balsamic Chuck Roast recipe for you to enjoy!

March Madness Balsamic Chuck Roast 

Ingredients

3-4 pound boneless chuck roast

1 1/2 cups of beef stock

1/4 cup balsamic vinegar

1 1/2 TBSP Worcestershire sauce

2 TBSP honey

1 TBSP soy sauce

Optional: 1/2 tsp red pepper flakes (and if you like more spice change to 1 TBSP)

Garlic powder

Cracked black pepper

Sea salt 

Olive oil

Step 1

In your slow cook and hold oven, add the beef stock, balsamic vinegar, Worcestershire sauce, honey, soy sauce, and optional red pepper flakes. Whisk to mix all ingredients. 

Step 2

Pat dry the chuck roast with a paper towel, and season generously covering it with garlic powder, cracked black pepper, and sea salt. 

Step 3

Heat a pan big enough to hold the chuck roast over medium-high heat with a layer of olive oil covering the bottom of the pan. Wait until the oil is hot enough for searing, and then, place the chuck roast in the pan. Sear for two minutes on each side. 

Step 4

Place the beautifully seared chuck roast in the slow cook liquid mixture. 

Step 5

Cook for six to eight hours on Low. 

Step 6

In the slow cook and hold oven, shred the meat with a fork and let it sit in the juices. Enjoy on its own, or make a tasty hot sandwich!

Note: We just included the meat portion of this recipe, but slow cook and hold ovens are great for full meals, so cut-up carrots, mushrooms, and potatoes can all be added to this recipe. The timing is the same, but you might want to add a little more salt, pepper, and garlic powder to taste for the veggies.
