Slow-Cooked Red Wine-Braised Short Ribs
Ingredients:
- 4 bone-in beef short ribs
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 1 small onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 2 cups red wine (Cabernet Sauvignon or Merlot)
- 2 cups beef broth
- 1 sprig rosemary
- 2 sprigs thyme
Instructions:
- Sear the Ribs – Season short ribs with salt and pepper. Heat olive oil in a pan over medium-high heat and sear each rib until browned on all sides.
- Build the Flavor – Remove the ribs and sauté onion, carrots, and garlic until softened. Stir in tomato paste and cook for 2 minutes.
- Deglaze with Wine – Pour in the red wine, scraping up any browned bits. Let simmer for 5 minutes to reduce slightly.
- Transfer to Thermodyne – Place the short ribs and vegetable mixture in a pan. Add beef broth, rosemary, and thyme.
- Slow Cook to Perfection – Set your Thermodyne unit to 190°F and cook for 8-10 hours, allowing the ribs to become exceptionally tender.
- Serve & Enjoy – Remove the ribs and strain the sauce, reducing it if necessary. Serve over creamy mashed potatoes or buttered noodles for an unforgettable Valentine’s Day meal.
