Ratatouille in the Crock Pot

This classic French dish, known for being somewhat labor-intensive, is simplified in this crockpot version from Food. Slice the ingredients, layer them into the pot, and sit back to enjoy the nine-hour cook time. 

Jamaican Oxtail

Though they can be prepared either in a pressure cooker or a slow cooker, we prefer the low and slow method. Combined with herbs and spices before being cooked on low heat for eight to ten hours, the delicious meat of the oxtail simply falls off the bone.
