Four Fresh Fish Marinades

In spring, we tend to think of lighter fare. White meats, vegetables, and cold salads tend to dominate menus. If you're looking for something light for your entree but aren't partial to chicken or pork, consider one of the following fish options. 

Four Fresh Fish Marinades 

First, we love this Lemony Garlic and Herb Halibut. The marinade itself is easy to throw together, and the fish only needs to be under the broiler for 8-10 minutes. Whether served over rice or on a bed of fresh greens, this quick and delicious option will wow your taste buds while requiring very little effort on your part.

If you can get your hands on some fresh salmon, consider this Honey-Soy Salmon Marinade. Just thirty minutes chilling in this savory mixture, and you'll be ready to broil. Since salmon isn't in season everywhere year 'round, double-check to be sure what you're buying is good, follow these simple instructions: 

Buying Fish: Flesh should be shiny, firm and spring back when touched. Avoid fish with dark edges or brown and yellowish discoloration. The contents should smell fresh and mild, not fishy or like ammonia.

Look for wild salmon from Alaska in the summertime, farmed Scottish salmon year 'round, or steelhead trout (which has the same red, rich flesh like salmon).

For a marinade that capitalizes on all the bright flavors of spring, try this Lime Chili for Tuna Marinade. This one packs a real punch of perfect sweet heat and pairs well with roasted veggies.
